Mesquite Honey Lime Chicken

I found this recipe on McCormick.com and decided to give it a try. Melanie and I made it for dinner last night and there was nothing I would change about it. I am a big fan of chicken sandwiches so I loved everything about it. It is so fast and easy and it makes a perfect summer dinner. Give it a try, I think you'll like it.


Ingredients:

1/4 cup fresh lime juice
3 tablespoons McCormick® Grill Mates® Mesquite Seasoning
2 tablespoons vegetable oil
2 tablespoons honey
1 1/2 pounds boneless skinless chicken breast halves


1. Mix lime juice, Mesquite Seasoning, oil and honey in small bowl. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

2. Refrigerate 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.

3. Grill over medium heat 12 to 15 minutes or until chicken is cooked through, turning frequently.

Chicken Club Sandwiches: Serve grilled chicken on toasted buns with melted Cheddar, slices of cooked bacon, tomato, lettuce and ranch dressing.

a visit from grandma......

My Mom came out to Texas to visit us for a week and it was so much fun! The boys really needed a visit from grandma, (and maybe me too.)
She read all kinds of books to G and West. He especially loved hearing the stories out of the Book of Mormon. I think she spent most of her time reading to them. It was a nice break for me. For some reason West started waking up at six every morning, and my Mom would come get him and let me go back to sleep. I have never had such a relaxing week. Thanks Mom!
The boys couldn't get enough of Grandma, they followed her everywhere. We had such a blast and a nice break. She was the kind of guest everyone wishes for. She cleaned, dressed the kids, gave baths, read books, and helped with everthing. I was spoiled to have her around. It's back to real life tomorrow. We had to take her back to the airport today and it was so hard but I just keep on reminding myself we're almost half way. Mom, thanks so much for coming, we really loved having you. We miss you already. On the way home from the airport Garrett said, "When are we going to pick up Grandma?" It's probably better he didn't know she was gone for another two months or he wouldn't have let her leave!

Joovy Caboose Stand-On Tandem Stroller




















I always said I would never have a double stroller! I hate how long and wide they are and I thought that it would be more work. I could see myself at the mall trying to fit through the aisles of clothes and getting stuck every time. West is about a year and a half now and I have been using a regular stroller since he was born. When we would go to the mall West would sit in the stroller and G would walk next to me for a little while but that didn't last long. I decided we should look into a double stroller for Texas because I knew I wouldn't have as much help as I do at home. I started researching online and was pleased to find so many different options. I found this Joovy stroller that has a seat on the back and the child can either sit or stand on it. G loves it! I can even buckle him in if I need to. It has saved my life, and has made shopping a whole lot easier. I would tell anyone in the market for a double stroller to take a look at this one. We love it!

how about a little help?

I have a problem. Weston is only 17 months old but he is suddenly acting like a 2 year old. I'm so confused! I didn't know they could hit the Terrible Two stage BEFORE they were 2. I hope this doesn't mean I have a long road ahead. I need advice. If you'll notice in the picture above, he is actually spitting at me because I told him not to do something! He started this spitting thing about a week ago and everytime he does it I paddle his bum and put him in his crib for time out. He gets his feelings hurt everytime and cries harder than I've ever heard him cry. But the next time I tell him no he will spit again. I don't know if he's old enough to go to time out but I really feel like I need to do something. Did anyone have a little one like this? Or does anyone have advice? Really, I would love to hear. Thank goodness my mom is coming to visit next week, maybe she can take over for a couple of days and show me how to handle this little trouble maker.

a crazy day....

Today I had to run a couple of arrands, and one of the places I had to go was the post office. I really hate the post office, well I guess it's the line at the post office that I hate. Anyway, I waited in line for about 45 minutes and I was almost to the counter when Garrett told me he had to go potty. I had just taken him to the bathroom before we went to the post office so this exact thing wouldn't happen. I asked him if he could wait until I was done and he said he would be fine(ya right!) I believed him. The second I got up to the counter he wet his pants and it went all over the floor. I don't think I have ever seen a little kid go so much!! I told the lady and she went to get a mop. While she was gone I was standing over the puddle so that no one would step in it. You should have seen the looks I was getting. I felt so bad that I made him wait. So when I was done with that mess, I noticed my shirt was a little wet, (I had been holding West the whole time because I left his shoes in the car) I looked down and noticed Weston's shorts were soaked ( I must have been holding him weird because the diaper was completely dry.) So here I am walking out of the post office with 2 wet kids and this sweet lady says, "Miss, I was backing up and I hit your car on accident." I couldn't believe my ears, I thought it must be some kind of a joke. I looked down at my car, and sure enough it had been hit. It wasn't bad, just some scratches. I was so lucky to have such a sweet person hit my car. She gave me all of her information and I was on my way. The second I got home her insurance agent called and said she had filed a claim. I am so glad she was on top of things. I don't think I could have taken one more thing! I know this doesn't sound too bad, but if you know me you know this would almost put me over the edge. But hey, we all have to have days like this to realize how blessed we are on the good days, right?
